[Setup] Plone Site not listed in ZMI

Yes, all that was done
I've discovered the problem this morning - I had an issue with the Python
Image Library which resolved itself by reinstalling it.
Once done, I was able to create my Plone Site

Did you get rid of the Five folder and restart Zope after copying all
the Plone folders to the products folder?
